GUEST SPEAKERS - Barry and Anton Lillywhite.
Barry was the chief cheese maker and lecturer at Charles Sturt University's excellent facility before they chose to close this part of the plan. They have done this with several courses in recent times which is great cause for alarm.
However, when one door closes......
Barry along with his son Anton gave us a wonderful example of what can be done. Coolamon Shire has swung in behind them and they are developing a Cheese Education and Recreation centre right in the heart of the town of Coolamon.
Anton with his background in hospitality is aiming to set up a tourist destination, serving fine coffee, fine cheeses and fine food.
They will have it set up so that tourists will be able to experience the manufacturing processes, and get the link between cows, milk and fungi!
The Board of Directors includes Neil Druce, who is behind the extremely successful Licorice Factory. Neil is also establishing a Whisky Distillery in
Corowa. so there will be a vey great emphasis on this area being a fresh processed food area.

The process is well on the way, and could well be open early next year.
