- Patrick Dupuis Old School Cheesery. Patrick retired from the military a few years ago , he and his family decided they would like to stay living in the Vermilion area and decided to try a new venture……a Cheesery. He had no training in cheese making so took a 2 week course in Eastern Canada and they purchased an acreage south of Vermilion to turn into a cheese making operation. This family run business initially wanted to make fine cheeses from goat’s milk but after doing market research, found that 70% of Canadians purchase mainly cheddar and mozzarella, so they tabled the goat cheese idea for the time being and concentrated on cow’s milk cheese(cheddar & mozzarella). In the last 4 years the operation has grown from mainly Farmers Market based sales to sections in the dairy department of over 40 stores, menus in 15 restaurants and served at the Edmonton Convention Center. Products from the Old School Cheesery recently made the list of “Top 25 things to Eat” in the Calgary based Avenue Magazine. Following the success of past few years, plans for future expansion are being considered. For more information on the Old School Cheesery visit their website https://www.oldschoolcheesery.com/
