Pickling is Carter's passion, and he shared his wonderful journey and his gardens with us through photos on April 11th.
Carter Smith is the owner and operator of Williston Village Farm. He farms on an acre of land behind the 1838 farmhouse -- on 2A in the village of Williston. The parcel includes a barn, a greenhouse and 20 raised beds where he grows vegetables for pickling. Williston Village Farms is also a mainstay at the Isham farmer's markets in the summer and fall, and those who have met him there know he if famous for his Dilly Beans, but he does so much more including beets, salsa verde, corn relish, and sweet and dill pickles.
