Sunday Supper

Val Velasco - Sopa Seco con Camorones

 

On Sunday, enjoy virtual community with your fellow Rotarians by learning how to cook a quick and delicious dinner, all while supporting your local grocer and raising money for a local charity (chef's choice). Participants gather ingredients ahead of time and on Sunday, the chef will walk us through how to make it!

The charity we are supporting: St. Margaret’s Center has been providing food, utility bill assistance, counseling services, advocacy through dignity and support to low-income persons in crisis, and assists individuals through case management to become independent and economically self-sufficient.

On the menu is:


Sopa Seco con Camarones- Mexican “Dry Soup” with Shrimp* 
Comfort Food

 

Oven heated to 350 degrees
 
1 cup minced onion
1 cup lard (traditional Mexican recipe), or 1 cup vegetable oil
4 fresh California or Pasilla chiles, or canned California green chiles,
seeds and pith removed and minced. (These are mild chiles; other chiles can be used if you prefer spicy food).
1 cup whipping cream
1 cup tomato purée
Sea Salt or Kosher salt
12 corn tortillas, cut into pie wedges (8ths) or about 1.5” strips
2 cups (about 8 oz.) shredded Monterey Jack cheese
2 tablespoons butter or margarine
1 cup cooked, rinsed and drained baby shrimp (for those with seafood allergies* substitute chicken or skip protein all together)
 
Serves 6. (Serve with your favorite green salad on the side.)
 
Cookware/items needed:
1 wide frying pan
Paper Towels
2-quart casserole dish greased
