Our wheat comes from the Loiselle Family Farm in Vonda, Saskatchewan. The farm has been in their family for 115 years. They have worked with certified organic & biodynamic management practices since 1985. Clif Leir met Marc Loiselle 15 years ago through the Slow Food organization as an initiative to connect wheat farmers and bakers. Their concerted efforts were aimed at bringing an heirloom wheat, Red Fife, back into commercial production. Clif had been looking for a definite expression of terroir in the wheat he was buying; being able to understand (and taste!) the effect of variety, growing climate and season in the grain and the resulting flour and breads. Marc and Clif’s relationship culminated into what is the essence of Fol Epi today. The Loiselle Family Farm supplies Fol Epi with Red Fife Wheat and Mustard seed.
