Zooming In and YES, 

I was fully dressed!

I did a “first” while on vacation on 8/26, also a “first” for York East, I ran our weekly meeting by ZOOM.  Why would I want to take time from my vacation, you ask?  Plain and simple, I wanted to check it out.  Now that I’m retired, I spend a lot of time at our home in Holden Beach, NC after the New Year, typically 6 to 8 weeks.  That’s a long time to be away while being your President.

I’m glad we have ZOOM as an option for our club.  While it started as our only option during the pandemic and morphed to a convenience (sure was nice waking up at 7:20am and putting on a shirt) I find it’s less used as a convenience and more as the only way members can attend our weekly meetings.  We seek younger members for our club, but those younger members often have kids to see off to school or daycare.  Some members ZOOM in while traveling to work or meet with a client.  Some members, like me, are out of state but want to keep up with our club. 

As time goes on, there are less and less members using the ZOOM option.  I encourage you to keep ZOOM in mind because the best way to keep up with the club is by attending our weekly meetings whether it’s in person or by ZOOM.

Apple Season is here!
This easy recipe is best served warm, but can be made ahead of time and reheated!  
A family favorite for many years!  ~Wendy
Cookie Apple Cobbler
6-8 Apples peeled and sliced 
 
1 cup Packed brown sugar
2 Tablespoons flour
1  Teaspoon Cinnamon
½ Teaspoons All spice
2 Tablespoons Lemon Juice

Topping:
1 Roll of Pillsbury refrigerated sugar cookie dough
2 Tablespoons granulated sugar
½ Teaspoon cinnamon
 
Heat oven to 350
 
In large bowl combine brown sugar, flour, cinnamon, all spice, & lemon juice.  
Mix well.
 
Add apples slices and mix well to coat apples.
 
Put mixture in ungreased pie plate.
 
Top by spooning sugar cookie dough on top of apples, sprinkle with remaining sugar and cinnamon.
 
Bake 40-45 minutes or until topping is golden brown.
