Tim Steinbach
Executive Director, Ooh De Lally – Omaha, Nebraska

Tim Steinbach is a seasoned culinary professional and community-focused leader serving as the Executive Director of Ooh De Lally, a nonprofit restaurant located at 4916 Underwood Ave in Omaha’s historic Dundee neighborhood. With a 30-year career in the restaurant industry, Steinbach brings a wealth of experience and a deep commitment to social impact, particularly in supporting individuals reentering society after incarceration. Steinbach’s journey in the culinary world has been marked by a dedication to
mentorship and community service. Before leading Ooh De Lally, he served as an executive chef at a senior housing facility, where he rediscovered the importance of helping others, a value instilled in him by his grandfather. This experience sparked his attraction to Ooh De Lally’s mission of creating a “community of second chances, familiar faces, and great food” through its partnership with Metropolitan Community College’s 180 Re-Entry Assistance Program, the largest on-campus reentry program in the United States.

At Ooh De Lally, which opened in March 2024 in the former space of the beloved Mark’s Bistro, Steinbach oversees a unique initiative that combines culinary excellence with social good. The restaurant employs a staff of 36, over half of whom are formerly incarcerated individuals or those who faced incarceration due to substance abuse. Through the Jumpstart program, in collaboration with MCC’s Institute for Culinary Arts, participants receive hands-on training in both front- and back-of-house roles, earning micro-credits that can transfer to MCC’s culinary program. Steinbach emphasizes a holistic approach, providing support beyond employment, including assistance with housing, transportation, and parole obligations, to ensure participants have the best chance at success.

Under Steinbach’s leadership, Ooh De Lally not only serves as a training ground but also strives to be a sustainable business, aiming for profitability by the end of 2025. The restaurant honors its predecessor
by offering reimagined versions of Mark’s classics, such as the signature mac and cheese, smoked chicken lasagna, and whiskey bread pudding, while introducing new American cuisine with modern
twists. Steinbach’s vision is to blend nostalgia with innovation, drawing diners with both the restaurant’s mission and its culinary offerings.

Steinbach’s commitment extends beyond the kitchen. He actively engages with the community, fostering a welcoming environment in Dundee, a neighborhood known for its historical friendliness. Steinbach’s philosophy is rooted in the belief that everyone deserves love, grace, and a second chance.
Big Thank You to Doug Nodgaard and Equitable Bank
Big thanks to Doug Nodgaard and Equitable Bank for hosting a fantastic July Rotary After Hours!

We had a wonderful evening of fellowship, celebrated Sarah Wedebrand’s birthday, and shared smiles with our Rotary baby and future Rotarian, Callum Maxwell Honaker. What a night!

Governor Robert's August 2025 Message
Rotary District 5650 Rotarians: Welcome to August, one of my favorite months of the year!!  Late summer vacations, county fairs, farmer’s markets, hot sunny days, and thoughts of going back to school and sports!!

A big thank you to every Rotary Club that has hosted me during my club visits over the past month!!  I have enjoyed meeting all of you and celebrating the great projects you have planned for this Rotary year in your communities!!  I hope that my message of community and peacebuilding is inspiring you to “Unite For Good.”

Here are a few highlights of my Rotary Club visits that you might find interesting.
  • Spoke at the Fairbury Rotary Club for lunch at Griffey’s Steakhouse & Lounge. President, Lana Likens, her husband Tony and Rotary Club members introduced me to Griffey’s pub food while at the same time they were helping to put on the Jefferson County Fair.
  • Spoke at the Falls City Rotary Club whose members meet at the John Philip Falter Museum on Main Street. John was an American artist who grew up in Falls City and is best known for his many paintings for The Saturday Evening Post whose covers highlight the Falls City Rotary Club. What an excellent location!! If you want to make new friends, make sure to make up a Rotary meeting with President, Merle Veigel, and the Falls City Rotary Club.
  • Spoke at the Beatrice Rotary Club, the piano playing/singing Rotary Club with President, Brian Daake. After the lunch meeting, they gave me a tour of their Rotary Veteran’s Memorial Park. What a beautiful park dedicated to the military men and women of the United States who served or are currently serving our country.
  • Spoke at the David City Rotary Club for lunch. Amazing meeting location at the Opera House on the town square. David City recently opened the Bone Creek Museum of Agrarian Art. The museum is in the former building where Model T automobiles were assembled and sold.
I look forward to continuing my August Rotary Club visits and meeting with you to learn about everything you are doing in your communities!!
