We heard from Jennifer this week.  She successfully hosted a sit down “Canadian Thanksgiving” dinner for 16 on the weekend.  Her host mother, Helle, is a fabulous cook.  They were unable to secure a “Turkey” so they cooked two geese…..We sent her our recipe for stuffing, gravy and the traditional vegetables, which they do not eat in Denmark.  Apparently it tasted like “a home memory” according to Jenn.  Helle invited her two future host families, as well as her counselor and his family.  According to Helle, they sat around and talked and ate too much, such is a Canadian tradition.  Jenn looked up the meaning and purpose of Thanksgiving and was able to explain to everyone why we celebrate Thanksgiving.  Apparently Helle really liked the way Jennifer cooked the brussel sprouts as they were not bitter and she will cook them that way herself from now on.
 
Jenn seems to be doing really well.  She is taking an on-line physics course through the NCDSB so that she doesn’t have to take it in first year of university next year.
