Guest Speaker - Clay Nutting
Clay welcomed everyone to Cantina Pedregal and was pleased to have us join him. He noted that he recognized a few of the members as he has spoken at the club a couple of times and the club has visited his Cannon restaurant in the past. His partners in this restaurant are Monterrey, Mexico natives Patricio Wise & Cinthia Martinez. They own and operate Nixtaco. Catina Pedregal is an opportunity for Patricio to showcase the regional culinary offerings of Monterey, Mexico. There are flavors and spices and types of cooking techniques that are unique to different parts of Mexico. This restaurant is inspired by the cooking techniques and recipes of
north-eastern Mexico, Monterey. Pedregal is the name of a community that Patricio grew up in. This region had many indigenous people as well as the Spanish colonist that brought with them a Mediterranean cuisine. The combination of the traditional spices with the Mediterranean spices has created unique flavors and dishes. The food is meant to be shared and is prepared and presented for sharing, family style.
The restaurant prepares everything from scratch. This includes grinding their own corn for the tortillas and tostadas. This results in a variance of colors coming from the different colored corn. They also offered a Ceasar salad in the mexican tradition with roasted romaine lettuce. Ceasar salad is actually a mexican recipe which just celebrated its 100th anniversary this past year. The regional cuisine uses a lot of char in the preparation of the food. This originated from the ranchers cooking over open fires. The restaurant has a vesuvio oven that cooks over charcoal at over 700 degrees. It is like a pizza oven with open flame. At the moment they are the only one in the United States that has one. It is a very cool toy for the chefs to pay with. They offer beans with lemon on it that brings a touch of the Mediterranean to the dish. They will be serving charred cauliflower with a chili vinaigrette. Also, they are serving charred chicken, crispy on the outside, moist and juicy on the inside. Portadeo, a stew, is also being served and can be used in tacos. When you have these ingredients you can take the tortillas and make your own tacos with the beans, stew, chicken and rice. This is a very regionally specific Mexican cuisine and is intended to be a fun exploration of a regionally diverse food. Clay thanked everyone for coming and hoped everyone enjoys the food and tells their friends about the restaurant.

Editor's Note: The meal was served family style which allowed us to engaged and visit with each other. All of the dishes were very good. The char was a nice flavor addition to all of the dishes. I especially liked the roasted romaine lettuce in the Caesar salad. Every dish was a delightful variation on familiar fair. I will be returning to enjoy this restaurant again in the near future.

The main portion of the meeting was the enjoyment of the food. As the lunch came to an end, President Jensen thanked everyone for coming and thanked Clay for the amazing food and for inviting us to experience Cantina Pedregal.She then closed the meeting by reminding everyone to Share the Magic of Rotary. The meeting ended at about 1:04 PM.
