FAMILY AND FRIENDS:
Geoff Cahif – Geoff had a back operation three weeks ago, and he says it went very well. He is no longer in pain and hopes to return to Rotary soon.
MetSO concert – Yesterday, MetSO played a magical concert at Churchlands Senior High School, and many members were in attendance,
really enjoying the orchestra and Ellie Malonzo's own music. Well done to Ann Bray and the musicians of MetSO.
CLUB AND COMMITTEE REPORTS:
• Pocket forests – John Bolto and President Jonas attended a meeting at Mt Hawthorn with other Clubs in our Rotary Community Group to hear from an expert on creating pocket forests in urban areas. Our Club will have an opportunity to participate in planting pocket forests in Perth. The speaker has been booked to come to one of our Rotary dinner meetings in February.

Richard Ranshaw for harassing the admin staff tonight as if he was border security and for conducting the national anthem, Ann does know how to play it!
GUEST SPEAKEROlivier Letrone – introduced by Bob Davis
Olivier has been in hospitality for 45 years and is a 4th generation chef. He was dux of his course at hotel school, which included subjects such as learning the art of cooking, front of house, floor management and English. He has worked in a diversity of places such as four star Michelin restaurants in France as well as the top establishments in England and on cruise ships.
Olivier came to Perth in 1997 and met his wife, Cassandra, here shortly after arriving. In 2006 he bought C-Restaurant, which is a fine dining, high end revolving restaurant in the city, he also owns Swell above the surf club in Mullalloo.
Covid was an especially difficult time for Olivier’s restaurants which had to shut quickly. One venue offered rent relief but another did not. Olivier kept his staff on so that when he was able to reopen he had his experienced workers ready to go.
Olivier has noted the change in the restaurant scene in Perth over the past twenty years. There are many more restaurants in Perth and it is very competitive. Also the advent of cooking shows on television over the past fifteen years or so has increased the requests and expectations of diners.
Olivier’s advice is also to have respect, for customers, staff and suppliers and to surround oneself with the best team possible who will act as true professionals.
