Set up consists of unloading ute, setting up marquee in town square for the MC, set up portable BBQ, tables and chairs, cashiers and two chafing trays (have one up and going as soon as possible).

THE PLAN
We will get the BBQ going as soon as possible and have one chafing dish full of cooked sausages, onions and hot dogs initially.
As the demand grows and more servers arrive we will begin serving from the second chafing dish.
While the roster has people assigned to various duties, I will vary those duties as the need arises for relief purposes throughout the night. If anyone sees a problem or a log jam in our process which I haven’t noticed – PLEASE let me know ASAP.
